Ilvermorny Cranberry Pie | Pottermore

The robes of Ilvermorny are blue and cranberry. The colours honour Isolt and James: blue because it was Isolt’s favourite colour and because she had wished to be in Ravenclaw house as a child; cranberry in honour of James’s love of cranberry pie.
—"Ilvermorny School of Witchcraft and Wizardry" by J.K. Rowling

Note: Cranberries are preeeetty tart, so feel free to substitute a cup or half cup for golden raisins, chopped apples, chopped pears, etc. You can even throw in some chopped pecans! The recipe for the crust below is from Cooking with MammaC, with minor changes.

Ilvermorny Cranberry Pie

Ingredients:
Crust
1 Stick (1/2 Cup) Butter, room temp
1 Cup Sugar
1 Egg, room temp
1/4 Cup Milk
1/2 tsp. Almond Extract
2 1/3 Cup Flour
2 tsp. Baking Powder
1/4 tsp. Salt
Filling
1 Cup Sugar
2 Tbsp. Cornstarch
1/2–1 tsp. Ground Cinnamon (to taste)
Pinch Ground Cloves
4 Cups Cranberries, fresh or frozen (+ any fruit you might be substituting in)
1/2 Cup Orange Juice (~1 lrg. Orange)
Zest from 1 Orange
1 Tbsp. Butter
1/4 Cup Graham Cracker Crumbs
Decoration/Serving
Almond Extract
Brown Food Color Gel
Vanilla Ice Cream

Directions:
1. Crust: Whisk together the flour, baking powder, & salt. In a large mixing bowl, beat the butter & sugar until just blended. In your liquid measuring cup, measure out the milk & add in the egg & almond extract, & then whisk to beat the egg. Blend into the butter/sugar mixture, & then gradually add in the flour mixture & blend until combined. Lay a large sheet of plastic wrap onto a flat work surface & place the dough onto it, rolling it into a circle ~ 1/4" thick or so. Slide onto a tray, cover with another sheet of plastic, & place in the freezer for ~12 minutes.
2. Grease a 9" pie pan. Remove the dough from the freezer & peel off the top plastic. Invert the pan onto the dough & then flip everything so the pan is right-side-up & the dough is in the pan, & peel off the other piece of plastic. Gently position the dough so it's laying against the bottom of the pan & up the sides nicely. Trim the access dough from around the edges, ball it up, roll it out, & wrap in plastic & put back in the freezer (this will be the top piece). Flute the edges of the dough if you'd like, or press with a fork. Put in the freezer for another 10 minutes. Heat oven to 375ºF.
3. Slide the pan out of the freezer & into the oven. Bake for about 12-15 minutes, or until the edges start to get a little golden brown. Remove from the oven (keeping the oven on) & use the bottom of a measuring cup to gently press the bottom & sides of the crust into a nice shape. Sit aside to cool.
4. Cut a clover template from paper (cut a 6" square & fold it into 1/8ths = half, half, & half again, then cut a sort of petal shape by rounding off the open corner). Remove the extra dough from the freezer, lay the template flat on top of it, & use a small sharp knife to cut out the clover shape. Place on parchment paper on a tray & bake for 12-15 minutes, or until the edges are golden brown. Remove & let cool.
5. Filling: Heat the oven to 400ºF. In a large pot on medium high heat, whisk together the sugar, cornstarch, & spices. Add in the cranberries & toss, & then add in the orange juice & zest. Stir & bring to a boil, mashing the cranberries a bit with a potato masher. Continue to cook until the mixture thickens a little, & then remove from the heat & stir in the butter.
6. Spread the graham cracker crumbs into the pie crust, & then pour the cranberry filling in. Place a pie shield (or foil strips) around the crust edge, & bake the pie for about 30 minutes. Remove & cool to your desired temperature.
7. Decorating: (You can do this while the pie is baking). In a tiny dish, use a fine clean paintbrush to mix together about 1/4 tsp. almond extract & 1 drop brown food gel. Using the individual Ilvermorny house crests for reference (I simply Googled them), carefully paint the creatures onto the clover sections, being as detailed or simplistic as you like, mixing more "paint" as needed. Gently place & press-wiggle the cookie onto the center of the pie. Use a sharp seated knife to cut, serve with vanilla ice cream, & enjoy!

I hope you have a magical New Year!
